In the Netherlands we celebrate another holiday in December besides Christmas. It’s called in dutch: Sinterklaas. It’s a chilndren’s holiday, celebrated in The Netherlands on December 5th. Already in November, Sinterklaas comes from Spain with many helpers. Every night, until December 5th, children put their shoes near the chimney in the house and sing songs. If they are lucky, Sinterklaas will pay a visit and surprise them with presents in their shoes.
According to the legend, Saint Nicolaas was a bishop who lived in Myra, around the year 300. As he cared for the poor, it broke his heart to see that a man with three daughters had no money to support them, let alone pay their dowry. His only choice was to send them into prostitution. The story goes that Saint Nicolaas wanted to prevent this, and threw money through the window, accidentally ending up in a shoe.
Around the holiday of Sinterklaas, we eat typical things like chocolate (in the shape of letters), meringues, very small spiced cookies called “kruidnoten” (translated in English: spicesnuts) and these cookies: speculaas. They look a lot like ‘gingerbread cookies’, but in gingerbread cookies it’s the ginger spice that dominates and in these cookies it’s cinnamon.
The smell of these cookies is so amazing! Only for that you should make these!

Als ik eerder had geweten hoe lekker zelfgemaakte speculaas is, had ik het zeker veel vaker gemaakt. Vorige week was ik in de Dille & Kamille en daar was iemand speculaas aan het bakken. De geur van de warme speculaas was zo ontzettend lekker, dat je wel even moest gaan kijken wie daar die speculaas aan het maken was (en proeven natuurlijk!). Natuurlijk wilde ik die geur ook in mijn huis, dus ging ik op zoek naar een recept. Na wat proberen, spelen met baktijden en aanpassen zijn dit ze geworden. Heelrijke, knapperige speculaasjes die ook je huis nog eens fantastisch doet ruiken! Lekker de kachel aan, dekentje er bij en versgebakken speculaas. Wat wil een mens nog meer?
Speculaas
for 30 cookies
Ingredients
- 20 g egg
- 100 g unsalted butter, room temperature
- 100 g brown sugar
- 30 g granulated sugar
- 10 ml milk
- 200 g all purpose flour
- 6 g speculaas spices (see little recipe below how to make this)
- 1 g salt
- 6 g baking powder
“Speculaas” spice mix:: 8 tsp cinnamon, 2 tsp cloves, 2 tsp nutmeg, 1 tsp coriander seeds, 1 tsp anise seeds, 1 tsp ginger, 1 tsp cardamom, 1/2 tsp white pepper. Grind these spices together and use 6 g in this recipe.
Instructions
- Mix with a spatula the butter, brown sugar and granulated sugar in a big bowl.
- Whisk the egg in a small bowl and add 20g of the egg with the milk into the butter mixture. Combine.
- Add the butter, spice mix, salt and baking powder. Mix with cold hands to a dough.
- Shape the dough into a flat disc and wrap with plastic wrap. Chill in the fridge for 30 minutes.
- Remove the dough from the fridge and let it sit out for 10 minutes. Roll out the dough between 2 sheets of parchment to 3 mm thick and cut out your desired shapes. Put them on a baking tray.
- Let the cookies rest on room temperature for 2 hours (if you’re making a giant cookie, it needs to rest for 5-6 hours)
- Preheat the oven to 180℃
- Bake the cookies for 15 minutes.
- Let cool completely

Speculaasjes
voor 30 speculaasjes
Ingrediënten
- 20 g ei
- 100 g ongezouten boter, kamertemperatuur
- 100 g donkere basterdsuiker
- 30 g kristalsuiker
- 10 ml volle melk
- 200 g bloem
- 6 g koek- of speculaas kruiden (kant en klaar te koop of je kunt het zelf maken:
8 tl kaneel, 2 tl kruidnagel, 2 tl nootmuskaat, 1 tl korianderzaadjes, 1 tl anijs, 1 tl gember, 1 tl kardamom, 1/2 tl witte peper) - 1 g fijn zout
- 6 g bakpoeder
- een uitsteker naar keuze
Bereiding
- Breek het ei in een klein kopje, klop het los en giet in een ander kopje wat op een weegschaal staat tot je 20 g hebt (het is iets minder dan een half ei)
- Doe de boter, bastersuiker en kristalsuiker in een grote kom en meng met een spatel tot één geheel.
- Voeg het ei en de melk toe en meng opnieuw.
- Voeg nu de bloem, kaneel, zout en bakpoeder toe. Kneed met een koele hand tot een samenhangend deeg. Kneed niet te lang.
- Wikkel het deeg in plasticfolie en laat 30 minuten in de koelkast rusten.
- Rol het deeg uit op een met bloem bestoven werkblad tot het 3 mm dik is.
- Steek de koekjes uit met een uitsteker en leg ze op een bakplaad bekleed met bakpapier.
- Laat de speculaasjes 2 uur drogen op kamertemperatuur. Je kunt natuurlijk ook op de ouderwedste manier de speculaas op speculaasplanken maken, laat ze dan 5-6 uur drogen.
- Verwarm de oven voor op 180 ℃.
- Bak de koekjes 15 minuten in het midden van de oven.
