Two weeks ago it was my birthday. 27 years old! My first birthday on my blog, I hope many will follow. There are so many blogs and it’s hard to be original and exceptional. I just do what I love and I hope you’ll love it too and maybe I can inspire you.

If you would ask me what my favorite cake is, I definitely say ‘Red velvet’. I love the smooth cake together with cream cheese or white chocolate. Maybe I have a small preference for cream cheese. Two years ago I made red velvet cupcakes with cooked cream cheese for the first time and I fell in love with it. This frosting is so delicious and definitely not buttery or crumbly. I never met anyone who didn’t like this cake, so since it was my birthday I’ve made this cake for my guests.

2 weken geleden was mijn verjaardag. 27 jaar oud! Mijn eerste verjaardag op mijn blog en ik hoop dat er nog veel mogen volgen. Er zijn zo veel blogs en het is lastig om origineel te zijn. Ik doe gewoon wat ik leuk vind. Ik hoop dat jullie dat ook vinden en dat ik jullie misschien zelfs kan inspireren. 

Als je mij zou vragen wat mijn favoriete cake is, zeg ik ‘Red Velvet’. Ik ben gek op de zachte, smeuïge cake in combinatie met roomkaas of witte chocolade frosting. Ik denk wel dat ik een lichte voorkeur voor roomkaas frosting heb. Twee jaar geleden maakte ik voor het eerst red velvet cupcakes met gekookte roomkaas frosting. Gekookte frosting klinkt vies, maar deze roomkaas frosting is zo ontzettend lekker! De frosting is zeker niet boterachtig of klonterig. Ik heb nog nooit iemand ontmoet die deze cake niet lekker vindt, dus ik maakte deze cake voor mijn verjaardagsgasten.

Red velvet cake with cooked cream cheese frosting

for 8-10 pieces

Ingredients

Cooked cream cheese frosting
recipe from ‘Bobette & Belle’

  • 200 g (1 cup) granulated sugar
  • 32 g (1/4 cup) all purpose flour
  • 3 tbsp cornstarch
  • 1/4 tsp salt
  • 360 ml (1 1/2 cup) whole milk
  • 4 1/2 tsp fresh lemon juice
  • 2 tsp pure vnilla extract
  • 250 g cream cheese, cut into cubes, room temperature
  • 240 g (1 cup) unslted butter, cut into cubes, room temperature

Red velvet cake

  • 2,5 dl buttermilk
  • 225 g (1 3/4 cup) all purpose flour
  • 1 tsp baking soda
  • 1 tbsp cocoa powder
  • 2 tbsp cornstarch
  • 270 g (1 1/3 cup) granulated sugar
  • 2 eggs
  • 2 dl vegetable oil
  • 1 tbsp red food coloring

 

Cooked cream cheese frosting

  1. In a medium saucepan, combine the sugar, flour, cornstarch and salt. Whisk in the milk a little at a time, making sure no lumps form. Cook over medium heat, whisking constantlu, until the mixture thickens to a paste (about 5 minutes). Be sure to cook until it’s a paste or the frosting will have a starchy taste. 
  2. Press the paste through a fine-mesh sieve into a bowl. Place plastic wrap directly on the surface of the mixture to precent a skin from forming. Refrigerte until completely cooled (about 1 hour). 
  3. Transfer the flour mixture to the bowl of a stnd mixer fitted with the whisk atrachment (or a elextric hand mixer) and add the lemon juice and vanilla. Whisk on high speed until the mixture has loosened a bit.
  4. With the mixer on medium-high speed, whisk in the cream cheese a cube at a time, making sure each piece is fully incorporated before adding more. Whisk in the butter a cube at a time, again making sure each piece is fully incorporated before adding more. You do not want any visible lumps of cream cheese or butter. Stop to scrape down the sides of the bowl as needed.
  5. Once the cream cheese and butter are both added, whisk a little longer until the icing is light and fluffy. Cover the bowl with plastic wrap and refrigerate for 1 hour to allow the icing to firm up before using.
  6. Use immediately or store in an airtight container in the fridge for up to 1 week. Before using fluff the icing with. rubber spatula to stir it and remove any air bubbles.

 

Red velvet cake

  1. Preheat oven to 175℃ (350℉). Grease and flour three 15 cm (6 inch) cake pans.
  2. Sift flour, baking soda, cacoa, cornstarch and sugar in a large bowl. Whisk together eggs, oil, buttermilk and food coloring in another bowl and add to the dry ingredients. Whisk 1 minute until smooth.
  3. Pour equal emounts of mixture (you can weigh the mixture) into the prepared pans and bake 20-25 minutes until a cake tester comes out clean. Let the cakes cool in the pans for 15 minuts until turning them to a wire rack to cool completely.

 

Assembly

Be careful. The frosting isn’t as thick and stable as buttercream, so make sure that you put the cake now and then in the fridge otherwise your cake will collapse!

 

  1.  If the cakes are rounded on top, even out with a knife. 
  2. Put the first layer on a cake board or a cake stand. Spread a thick layer of frosting on the first layer. Put the cake in the fridge for 15 minutes.
  3. Put carefully the second layer on the frosting. Spread a thick layer of frosting on the second layer and put the cake in the fridge again to set. After 15 minutes put the last layer on top and spread a thin layer of frosting all over the cake (this is the crumb coating layer, to hold all the crumbs in place) using an offset spatula. Be careful, the cake isn’t very stable. Put the cake in the fridge for about 30 minutes or until the crumb coating had firmed up a bit. 
  4. Spread the remaining frosting all over the cake until the cake is smooth. 
  5. Let the cake set another 30 minutes before serving. You can store the cake for up to 3 days.

Red velvet cake met roomkaas frosting
voor 8-10 stukjes

Roomkaas frosting

  • 200 gram suiker
  • 32 gram bloem
  • 3 eetlepels maïzena
  • 1/4 theelepel zout
  • 360 ml volle melk
  • 4 1/2 tl citroensap
  • 2 tl vanille extract
  • 250 g roomkaas (gebruik mon chou, philadelphia is niet stevig genoeg) op kamertemperatuur
  • 240 g boter

Red velvet cake

  • 2,5 dl karnemelk
  • 225 g bloem
  • 1 tl baking soda
  • 1 el cacao
  • 2 el maïzena
  • 270 g kristalsuiker
  • 2 eieren
  • 2 dl zonnebloem olie
  • 1 el rode voedingskleurstof

Bereiding

Frosting

Maak eerst de frostingdeze moet namelijk nog een tijdje in de koelkast staan

  1.  Meng in een pannetje de suiker, bloem, maïzena en zout. Klop de melk er beetje bij beetje doorheen, zodat er geen klontjes ontstaan.
  2. Verwarm het mengsel op  middelhoog vuur, terwijl je constant blijft kloppen, totdat het mengsel indikt. Dit duurt ongeveer 5 minuten. Kook het mengsel zeker lang genoeg, anders smaakt je frosting naar zetmeel.
  3. Giet het mengsel door een zeef in een kom, zodat je de klontjes die er eventueel in zitten er uit haalt. Leg plastic folie direct op het mengsel, zodat je geen hard laagje op je frosting krijgt en zet in de koelkast tot het goed is afgekoeld. Dit duurt ongeveer een uur.
  4. Zodra het mengsel is afgekoeld voeg je het citroensap en vanille extract toe. Vervolgens klop je het mengsel in de staande mixer met garde (of met een handmixer) tot het wat losser is.
  5. Zet je mixer op medium snelheid en voeg de roomkaas beetje voor beetje toe. Wacht steeds met meer toevoegen tot het vorige is opgenomen. Vervolgens doe je hetzelfde met de boter. Schraap af en toe de zijkanten van de kom schoon met een spatel.
  6. Wanneer je alles hebt toegevoegd mix je nog even, totdat het mengsel licht en luchtig is. Dek de kom af met plastic folie en zet deze 1 uur in de koelkast tot gebruik. Je kunt de frosting 1 week in de koelkast bewaren. Klop deze voor gebruik even los. 

 Cakes

  1. Verwarm de oven voor op 175 ℃. Vet 3 bakvormen van 15 cm in en bestuif deze met bloem. 
  2. Zeef de bloem, baking soda, cacao, maïzena en suiker in een grote kom. Klop in een andere kom de eieren, olie, karnemelk en kleurstof door elkaar. Voeg de droge ingrediënten toe en klop nog 1 minuut tot alles goed gemengd is. 
  3. Verdeel het beslag in 3 gelijke delen (je kunt het beslag ook wegen) en verdeel over de bakvormen. Bak in het midden van de oven 20-25 minuten of tot een cake tester er schoon uit komt. Laat 15 minuten in de vorm afkoelen en daarna helemaal op een taartrooster.

 

Samenstellen

Let op! Doe dit voorzichtig. De roomkaas frosting is niet zo stevig als botercrème. Zet dus op de aangegeven momenten je taart echt in de koelkast, anders zakt deze in elkaar. 

  1.  Als de cakes wat rond zijn aan de bovenkant, snijd je deze recht. 
  2. Leg de eerste laag op een groot bord of taartplateau. Verdeel een dikke laag frosting over de cake en zet deze 15 minuten in de koelkast. 
  3. Leg de volgende cakelaag er voorzichtig op. Verdeel een dikke laag frosting over de cake en laat deze weer opstijven in de koelkast. Na 15 minuten haal je de cake uit de koelkast en verdeel je een dunne laag frosting over de cake. Dit is niet de laatste laag, maar een laagje om alle kruimels vast te zetten, zodat je deze straks niet in je frosting zitten. Zet de cake 30 minuten in de koelkast zodat de cake wat op kan stijven.
  4. Verspreid de rest van de frosting over de cake. En decoreer naar wens.
  5. Laat de cake nog 30 minuten opstijven voordat je deze serveerd. De cake kan 3 dagen in de koelkast bewaard worden.
