Last june I went to Paris for a foodphotography workshop. It was something I wished to do for a long time. I really love baking, but I didn’t know how to let them look good on a photo. If I baked a beautiful pie, the photos were always very disappointing. That really had to change!
So when I saw that there was a photography workshop in Paris given by amazing food photographers, I didn’t have to doubt and I signed up! The workshop was given by Eva Lambooij, Joann Pai, Elise Dumas and Linda Lomelino. That’s amazing, isn’t it?! There were also amazing other participants and I learned a lot. If I look at the photos I made at the workshop and I look at my photos now, I can see that there is a huge difference. I still have to learn a lot, but the more I practice, the more I learn. And one of the best things I learned: photographing is awesome!!!

I made these tarts togheter with Jennifer Pogmore at the workshop in Paris. The second day we had to make couples and we went to the market to buy ingredients for lunch. I was so lucky I could work with such a great pastry chef as Jennifer! We choosed to make something with fruit of the season; strawberries!
These strawberry tarts are so delicious and romantic! Perfect for Paris. What is not so romantic, but what I want to share with you is this fact: do you know how a bachelorette party is named in Paris?

Anyway, these tarts are very romantic!
Strawberry shortbread tarts with basilicum cream
for 15 tarts
Ingredients
Brittany shortbread
- 1 g salt
- 15 g baking powder
- 176 g caster sugar
- 245 g all-purpose flour
- 176 g unsalted butter, room temperature
- 90 g egg yolk (about 6 eggs)
Cream
- 750 ml whipping cream (30% fat content)
- 100 g mascarpone
- 1 vanilla pod
- 20 basil leaves (optional, if you wish to add basil to the recipe, infuse the leaves in the cream overnight)
Decoration
- 1 kg medium sized strawberries
- Apricot jam (for glaze)
Instructions
- Cream together butter and sugar with the paddle attachment of your electric mixer, or an electric handheld whisk. Add the egg yolks bit by bit until fully incorporated.
- Add flour, baking powder and salt and mix until a dough is formed. Cover with plastic wrap and chill in the fridge for 30 minutes.
- Preheat the oven at 180℃(356F).
- On a piece of lightly floured baking paper, roll out the dough to a tickness of 1 cm. Bake in the center for 10 minutes.
- Remove the tray from the oven, use a round 5 cm cookie cutter and cut out rounds in the dough. Place back in the oven for a further 10 minutes or until a golden brown colour. Cut the same rounds again and leave to cool.
- Whip the cream with the scraped vanilla pod and mascarpone until firm. Set aside until using.
- When the shortbread is cooled you can cut the strawberries. Cut them in half and set aside.
- Using a star-tipped piping tip, pipe cream in the centre of each shortbread biscuit. Place the strawberries overlapping each other around the cream.
- Bring 4 tablespoons of apricot jam to a boil with 2 tablespoons of water, whisking the mixture constantly. Strain the mixture and place back in the pan. Brush each strawberry with the apricot glaze, reheating the glaze is necessary.
- Pipe a spiral of cream on the top of each tart. Decorate with a halved strawberry.

Aardbeien shortbread taartjes met basilicum room
voor 15 taartjes
Ingrediënten
Shortbread
- 1g zout
- 15 bakpoeder
- 176 g kristalsuiker
- 245 g bloem
- 176 g ongezouten boter
- 90 g eigeel
Room
- 750 g slagroom
- 75-150 g mascarpone
- 1 vanille stokje
- 20 basilicum blaadjes (optioneel)
Decoratie
- 750 g aardbeien
- Abrikozen jam
Bereiding
- Als je basilicum toe wilt voegen aan je room: doe de slagroom in een kom en meng met de basilicum blaadjes. Dek af en laat een nacht in de koelkast staan.
- Mix de boter en de suiker met de platte deeghaak in je keukenmachine (of met de handmixer) tot het romig is.
- Voeg het eigeel beetje bij beetje toe tot het volledig opgenomen is en voeg nu bloem en bakpoeder toe.
- Haal het deeg uit de kom en wikkel in plastic folie. Leg het deeg minimaal 30 minuten in de koelkast. Verwarm intussen de oven voor op 180 ºC.
- Leg een stuk bakpapier op het aanrecht en bestuif dit met bloem. Rol hier het deeg op uit tot dit ongeveer 1 cm dik is. Bak 10 minuten in het midden van de oven.
- Haal de bakplaat uit de oven en steek met een ronde vorm van 8 cm rondjes in het deeg. Doe de bakplaat terug in de oven en bak nog 10 minuten of tot het deeg goudbruin gekleurd is. Laat afkoelen
- Snijd de aardbeien door de helft en zet opzij.
- Giet de slagroom in een kom, schraap de zaadjes uit het vanille stokje en doe ze bij de slagroom. Klop de slagroom met de vanille en mascarpone totdat deze stevig is.
- Schep de room in een spuitzak met een stervormig spuitmondje. Spuit room in het midden van ieder koekje. Plaats de aardbeien overlappend rond de room.
- Breng 4 eetlepels abrikozenjam met 2 eetlepels water aan de kook, roer continu. Smeer iedere aardbei in met de gelei. Dit gaat het makkelijkst met een bakkwastje. Als de gelei te stijf wordt, verwarm je deze opnieuw.
- Spuit een toef room op ieder taartje. Maak het taartje af met een halve aardbei.
