I’ve seen a few beautiful places in my life and one of them was at the place were I got the recipe for these pancakes. Two years ago I was in Canada with friends. We stayed at our friend’s familiy for two nights. The house was in the middle of nowhere, next to a lake. It was beautiful and so peacefull and quiet. The moment the night fell, it was very dark with no lights nearby. When I looked at the sky, the stars shined so bright. I just wanted to lay down there and look at the bright stars in the inky-black sky.  It was magical.

The stars made me realize how small we are and how big the world is. There are many beautiful places and many beautiful things, but why do we make our world so small sometimes? Why do we forget about those things and just think about ourselves? Busy with work and obligations, days fly by and years pass. Was life always like this? I can’t believe that we were always so demanding, and especially demanding to ourselfs. I’m guilty too. I demand a lot from myself and it took me long to realize that. Just working and taking care of other people, but I found out that you also have to take good care of yourself. It’s not easy, but necessary.

I find my peace and quiet moments when I’m taking photos. I love to create something beautiful and I hope I can do this my whole life. That I can dwell by the small and beautiful things in life.

Fluffy pancakes
makes 15


  • 1 ½ cups milk (360 ml)
  • ¼ cup white vinegar (60 ml)
  • 2 cups flour (260 g)
  • ¼ cup white sugar (50 g)
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 eggs
  • ¼ cup butter, melted (60 g)


  1. Combine milk and white vinegar in a large bowl. Set aside for five minutes to “sour”. The milk becomes quite thick and it looks a bit like its shifted, don’t throw away this is normal.
  2. Combine flour, sugar, baking soda, baking powder and salt in a bowl. Mix until everything is combinated. Whisk eggs and butter in the sour milk.  Pour the flour mixture into the wet mixture and mix until all lumps are gone.
  3. Heat a pan or skillet and put a little bit butter into the pan. Pour ¼ cup of batter into the pan. Cook both sides until golden brown.





Fluffy pancakes
voor 15 pancakes


  • 1,5 cup melk (360 ml)
  • 1/4 cup azijn (60 ml)
  • 2 cups bloem (260 g)
  • 1/4 cup suiker (50 g)
  • 2 tl bakpoeder
  • 1 tl baking soda
  • 1 tl zout
  • 2 eieren
  • 1/4 cup gesmolten boter (60 g)


  1. Combineer de melk met de azijn en zet opzij om “te zuren”.
  2. Doe de bloem, suiker, backing soda, bakpoeder en zout in een grote kom en meng.
  3. Klop de eieren en de boter in de zure melk. Meng vervolgens beetje bij beetje de bloem in het mengsel zodat je zo min mogelijk klontjes krijgt. Klop tot een glad beslag.
  4. Verhit de pan en bak 1/4 cup beslag per keer tot de pancakes goudbruin zijn.
  5. Als je de pancakes warm wilt houden tot je ze allemaal gebakken hebt, verwarm dan een pannetje met water en zet daar een bord op. De pancakes kun je stapelen en afdekken met wat aluminiumfolie, zodat ze lekker warm blijven

Serveer met maple syrup
