Tuesday morning at a small restaurant in Oosterhout. I’m a little bit nervous for my first interview. Ben is exactly on time. He looks so relaxed and kind. We chat a little bit and I start with the first question, but after that it didn’t felt like an interview at all anymore. More like a nice conversation! I lost all my nerves..
Ben Ungermann (33), runner up at Masterchef Australia season 9. He’s renowned for his ice-cream creations with unique flavors. Because of his affinity for ice cream and Dutch food during Masterchef, he became famous. Especially in the Netherlands. He has been here for over a month and really busy with lots of nice things. I was honored that he made time for me to interview him.
You’ve been here in the Netherlands for over a month now. What was the nicest thing about your stay?
The people. I’m probably even more popular here than in Australia. That’s weird, but it’s true. When I applied for Masterchef they told me it’s the biggest cookingshow in the world. Holland is one of the countries with super fans along with India and Brazil. I have a real affinity to this country. My mom is Dutch, my father is Dutch-Indonesian. I was always connected to the Netherlands. On the show I tried to show and expose the Dutch cuisine. It’s my fourth time here, but it always feels like home.
What do you love so much about the “Dutchies”?
I think it’s because the Dutch culture has nice things. It doesn’t matter who you are, you can talk to everybody. Like while I’m sitting in a taxi and I can have a real conversation with the taxi driver. In Australia people are more reserved. Dutch people are even more laid back than Australians.
Could you live here in the Netherlands?
Yes, I could live here. Things are going really successful here. I just finished filming at Masterchef Nederland.
During your stay you’ve worked in a few Dutch kitchens. Why did you do that?
I worked in a couple of kitchens and I absolutely loved it. My last job was at the fishmarket in Rotterdam. That was the most fun thing I’ve done here in Holland. They had an amazing crew, beautiful people, amazing to work with. They accommodate to me, so I could be at my best. If I wasn’t happy with something, it’s was no problem and they changed it. That’s a good example of what I like about Dutch people. They go above and beyond. They’re also very kind and can be really honest but I love that too.
When are you going back to Australia?
On the end of this week, I go to Japan.
Everything in Japan is small. I’m not even a really big guy, but everything is built for small people. I love Japan. I love it not as much as Holland, because that really feels like home, but I really love their food and culture. The food is nowhere better than in Japan. You can’t eat a bad meal there. Everything is so good, even if you just make sushi, you have to learn for 10 years. Everything you get there is premium.
Maybe the Dutch word for potatoes ‘aardappels’… No, I think it’s ‘gezellig’. Because it means so many things. Yes, ‘gezellig’ is my favorite Dutch word.
I’ve read somewhere you miss ‘drop’ and ‘hagelslag’ in Australia?
We have a little bit of drop in Australia, but you have maybe one to choose from. In the Netherlands you can choose from about 30 different kinds. My favorite sweet thing from Holland that I miss in Australia is ‘speculoospasta’ (something sweet to eat on your sandwich). I love it! So, or I have to learn how to make it, or I need to buy a lot of jars every time I’m in the Netherlands.
It’s a retro ice salon and very busy. We serve only high quality ice cream, without any crap. My brother can’t cook, but he is a really good business man. So I feel comfortable being here. He’s taking good care of the shop.
They sell my ice cream already at Donuts & Co in Den Haag, I will see how that goes. But I would love open my own ice cream salon here.
Do you also love to bake?
Yes, I do, but I don’t think I know enough to call myself a proper baker. I love making biscuits, I love making shortbread. I use a lot of biscuit crumbles in my desserts. I also love to experiment with spices. One of my favorite things is cardamom shortbread. Cardamom is delicious in shortbread. My strengths are unique flavors and thinking outside the box.
What was your dream before Masterchef and is it changed after it?
Nothing has changed. My dream was always to have my own restaurant and I still want that. My dream is a Dutch restaurant that is small and intimate, only 24 to 30 people, with really high premium quality food. And I would to serve Dutch food with a twist. I really want to celebrate Dutch food.
Everybody keeps asking me why, but I think Dutch food is actually really tasty. I think if you elevate it, it’s a really tasty cuisine.

There is one good thing that you miss here and one bad thing you don’t have to miss.
The beaches in Australia are amazing. It’s nice and warm, the sea is crystal blue and the sand is beautiful and white. And the weather is almost always perfect.
Also a lot of people die in car accidents, because they’re always on the road. And if you upset an angry male he can kick you. They’re very aggressive. If you youtube it, you will see some videos (I didn’t you-tube it. The way Ben described it was enough for me!).
‘Gezellig’ is my favorite Dutch word.
We’re chatting for over an hour already. He really takes his time for the interview and he is very kind and funny. In the mean time I try to learn him some Dutch words and help him with his accent. Yeah, Dutch is a very hard language! Especially the words with ‘sch’ are very hard to pronounce
Do you ever want to release a cookbook?
Yes, I do. I just have to find the time to do it. I hope to release something soon, maybe also in Dutch. I just need to learn the language. It will be a healthy cookbook. Healthy food, but still tasty.
How do your children think about what you’re doing now?
They’re really understanding about everything and really proud. I do miss them. When I’m back I will make some time for them. I missed that a lot last one and a half year. It was so busy! I love to fly with them to the Netherlands one time and let them see this country.
My inspiration? Can I have two?
The first one is my ‘oma’ (the Dutch word for grandma). When I was young, a teenager, I lived with my opa and oma in Australia for a little while. Oma did all the cooking. I love my parents, but they’re terrible cooks. So when my oma cooked I said to her ‘oma, this is so delicious! Lekker! What are you doing so different? She slowly began to teach me some basics. From there, my love for cooking grew. After that I learned myself cooking and got a lot of information of the internet.
I have a few. I have a roasted garlic ice cream. It sounds crazy, but it’s super delicious. The reason it works is because we’re roasting the garlic till it becomes sweet. You lose the sharpness and the heat and it works beautifully in an ice cream, because it goes so well with cream. We serve it with an after dinner mint. I also really love my lavender and honeycomb ice cream. I don’t think that’s unique anymore. Everyone loves it. My other favorite is my salted caramel, bacon and pecan ice cream. It’s so good. The pecan rounds it all off.

Interview Ben Ungermann
Dinsdagochtend in een brasserie in Oosterhout. Ik ben een beetje zenuwachtig voor mijn eerste interview. Precies op tijd komt Ben binnen lopen. Hij komt meteen heel relaxed en aardig over. We praten eerst een beetje en daarna begin ik aan het interview. Na de eerste vraag voelt het helemaal niet meer als een interview, maar als een gesprek en alle zenuwen vallen van me af.
Ben Ungermann (33) is tweede geworden in het laatste seizoen van Masterchef Australia. Hij staat bekend om zijn ijscreaties met unieke smaken. Vanwege zijn affiniteit voor Nederlands eten tijdens Masterchef, werd hij bekend. Vooral in Nederland. Hij is afgelopen weken hier geweest en was erg druk met veel leuke dingen. Ik was vereerd dat hij tijd voor mij wilde maken om hem te interviewen.
Je bent nu meer dan een maand in Nederland. Wat was het leukste van je verblijf?
De mensen. Ik ben hier in Nederland mogelijk nog populairder dan in Australië. Raar, maar waar. Als je je opgeeft voor Masterchef, vertellen ze je dat het de grootste kookshow van de wereld is. Nederland is één van de landen met grote fans, samen met India en Brazilië. Ik heb echt een affiniteit met dit land. Mijn moeder is Nederlands en mijn vader Nederlands-Indonesisch. Ik ben altijd verbonden geweest met Nederland. Tijdens de show probeerde ik de Nederlandse keuken te laten zien en te vertegenwoordigen. Het is mijn vierde keer hier, maar het voelt altijd als thuis.
Wat vind je zo leuk aan de “Dutchies”?
Ik denk dat het komt doordat de Nederlandse cultuur fijne dingen heeft. Het maakt niet uit wie je bent, je kun met iedereen praten. Bijvoorbeeld wanneer ik in een taxi zit en een echt gesprek kan hebben met de chauffeur. In Australië zijn mensen meer op zichzelf. Nederlanders zijn zelfs relaxter dan Australiërs!
Zou je in Nederland kunnen wonen?
Ja, dat zou ik zeker kunnen. Het gaat hier echt goed. Ik ben net klaar met het filmen voor Masterchef Nederland.
Je hebt tijdens je verblijf in Nederland in een aantal keukens gewerkt. Waarom heb je dat gedaan?
Ik heb in een aantal keukens gewerkt en ik vond het echt fantastisch. Mijn laatste keer was bij de ‘fishmarket’ in Rotterdam. Dat was denk ik het leukste wat ik hier in Nederland heb gedaan. Ze hadden daar een fantastisch team, geweldige mensen waar het heel fijn mee werken was. Ze wilde me ook in alles voorzien, zodat ik op mijn best kon zijn. Als ik niet blij met iets was, was dat geen probleem en veranderden ze het. Dat is een goed voorbeeld van waarom ik zo van Nederlandse mensen houdt. Ze doen alles voor je. Ze zijn heel vriendelijk en heel direct, maar daar houd ik ook wel van.
Wanneer ga je terug naar Australië?
Aan het einde van deze week ga ik naar Japan.
Je bent ook gek op Japen is het niet?
Alles in Japan is klein. Ik ben niet eens zo groot, maar alles is daar gebouwd voor kleine mensen. Ik ben gek op Japan, niet zoals op Nederland. Nederland voelt als een thuis, maar ik ben gek het Japanse eten en hun cultuur. Het eten is nergens zo goed als in Japan. Je kunt daar gewoon niet slecht eten. Alles is zo goed daar. Zelfs als je daar sushi wilt maken, moet je voor 10 jaar studeren. Alles wat je daar krijgt is van hoge waarde.
Hoe gaat het met je nieuwe ijssalon in Australië? Je doet dit samen met je broer?
Het is een retro ijssalon en het is er erg druk! Mijn broer kan niet koken, maar hij is een goede buisiness man. Ik kan de ijssalon met een gerust hart aan hem overlaten. Hij zorgt goed voor de salon.
Zou je overwegen om ook een ijssalon in Nederland te openen?
Ze verkopen mijn ijs al bij Donuts & Co in Den Haag. Even afwachten hoe dat gaat lopen, maar ik zou het erg leuk vinden om mijn eigen ijssalon hier te hebben.
Wat was je droom voor Masterchef en is je droom hierna veranderd?
Er is niets veranderd. Het is altijd mijn droom geweest om mijn eigen restaurant te hebben, en ik wil dat nog steeds. Mijn droom is een Nederlands restaurant dat klein is en intiem, voor ongeveer 24 tot 30 mensen, met een zeer hoge kwaliteit van het eten. Ik zou graag Nederlands eten serveren met een twist. Ik wil het Nederlandse eten vieren!
Iedereen blijft me vragen waarom, maar ik denk echt dat Nederlands eten heel smakelijk is. Als je het naar een hoger niveau tilt, is het een hele smakelijke keuken.
Houd je ook van bakken?
Ja, maar ik denk dat ik niet genoeg van bakken weet om mezelf een goede bakker te noemen. Ik maak graag koekjes en shortbread. Ik gebruik vaak koekjes crumb in mijn desserts. Ik houd er ook van om bij het bakken te expirimenteren met specerijen. Kardamom is bijvoorbeeld heel lekker in shortbread! Mijn sterke kanten zijn om unieke smaken te verzinnen en ‘outside the box’ denken.
Wat is je favoriete Nederlandse woord?
Misschien aardappels? Nee, ik denk dat het toch ‘gezellig’ is, omdat het zo veel dingen betekend.
Wie is je inspiratie en waarom?
Kan ik er twee kiezen? De eerste is mijn oma. Toen ik jong was, een tiener, heb ik een tijdje bij mijn oma en opa gewoond. Mijn oma kookte altijd. Ik hou van mijn ouders, maar ze zijn slechte koks. Dus toen mijn oma had gekookt zei ik: ‘oma, dit is zo lekker! Wat doe je zo anders?’. Vanaf toen begon ze mij de basis van koken te leren. Vanaf toen is mijn liefde voor koken gegroeid. Hierna heb ik mezelf leren koken en veel informatie van internet gehaald.
De andere persoon die een inspiratie voor mij is, is Claire Smith. Ze was een gast bij Masterchef seizoen 9. Het was een uitdaging waarbij ze ons verraste met ingrediënten. Ik won die uitdaging. De reden dat ze een inspiratie voor mij is, is omdat ze een vrouwlijke chef is die nu een Michelin-ster heeft verdiend. Ze heeft onder Gordon Ramsey gewerkt. En, zoals je weet, kan hij echt streng zijn. Ik heb veel respect dat ze overeind blijft in een wereld die misschien wel gedomineerd wordt door mannen. Ik waardeer ook haar filosofie over eten en de manier waarop zij over eten denkt. Daarom is zij mijn inspiratie.
Ik had ergens gelezen dat je drop en hagelslag mist in Australië?
We hebben wel wat drop in Australië, maar enkel 1 soort. In Nederland kun je uit meer dan 30 soorten kiezen. Mijn favoriete zoete product wat ik in Australië echt mis, is speculoospasta. Ik ben er gek op! Dus of ik moet leren hoe ik het moet maken, of ik moet iedere keer als ik in Nederland ben een hele boel potten kopen.
Is er iets uit Australië wat je mist als je in Nederland bent?
* Denkt een hele poos na *
Er is iets goeds wat jullie hier missen en iets slechts wat jullie niet hoeven te missen hier. Het goede ding zijn de stranden. De stranden in Australië zijn fantastisch! Het is er lekker warm, de zee is kristalblauw en het zand is prachtig en wit. Het weer is er bijna altijd lekker warm.
Maar wat jullie niet hebben, en waar ik blij om ben, is dat bijna alles in Australië je kan doden. We hebben slangen, haaien, krokodillen en kangaroes (ik moest aan Ben vragen wat hij met kangaroos bedoelde, geen idee dat die beesten gevaarlijk zijn!).
Er gaan ook veel mensen dood door auto ongelukken, want mensen zijn bijna altijd onderweg. En als je in Australië een man boos maakt, kan hij je zomaar aanvallen. Er zijn mensen daar die heel agressief zijn. Als je op youtube filmpjes opzoekt zul je het zien (dit heb ik niet gedaan. De beschrijving van Ben was genoeg voor mij).
Zou je ooit een kookboek uit willen brengen?
Zeker. Ik moet alleen de tijd vinden om het te doen. Ik hoop snel iets uit te kunnen brengen, misschien ook wel in het Nederlands. Ik moet alleen de taal nog leren. Het wordt een gezond kookboek. Gezond, maar nog steeds lekker.
Wat vinden je kinderen van wat je nu doet?
Ze zijn heel begripvol voor alles wat ik doe en heel erg trots. Ik mis ze. Als ik terug in Australië ben ga ik zeker tijd voor ze maken. Ik heb ze erg gemist afgelopen anderhalf jaar. Het was zo druk! Ik zou het leuk vinden om ze een keer mee te nemen naar Nederland en ze dit land te laten zien.
Als laatste de Instagram vraag: wat is je meet unieke ijs soort?
Ik heb er een paar. Ik heb een geroosterd knoflook ijs. Het klinkt gek, maar het is echt heel lekker. De reden dat dit werkt is omdat we de knoflook zo lang roosteren totdat deze wat zoeter wordt. De knoflook verliest zijn scherpe en pittige kant. Het is prachtig in ijs, omdat het zo goed met de room samen gaat. We serveren het met een after dinner mint. Ik ben ook gek op mijn lavendel en honycomb ijs. Ik denk dat dit niet echt uniek meer is, maar iedereen is er gek op. Mijn andere favoriete smaak is mijn gezouten karamel, bacon en pecannoten ijs. Het is zo goed. De pacannoten maken het helemaal af.
Ik vond het fantastisch om Ben te interviewen. Hij is echt net zo aardig als op televisie. Ik heb zo veel respect voor hem. Hij beheert zijn eigen social media, probeert iedereen te antwoorden en doet veel vrijwilligerswerk. Bedankt Ben dat ik je mocht interviewen en voor de gezellige ochtend. Jij bent mijn inspiratie!
