I’m a person who makes lists. It’s sounds maybe a bit neurotic, but maybe I am sometimes. My head is often a big mess and with making lists I have the feeling I can overview the chaos. Next week I’m travelling to Norway and I’ve already made a list and even reserved a room to put all my stuff I have to bring. I also look at other lists on internet to be sure I never forget anything to put on my list (people write crazy things on their lists! You should google it!)

This macaron version is so good! Only the smell of the crushed pistachio nuts is already amazing!

 Pistachio macarons with raspberry ganache
makes around 25 macarons

Ingredients

Macarons

  • 120 g almond meal
  • 30 g pistachio nuts, finely ground
  • 150 g powdered sugar
  • 110 g egg white
  • 150 g granulated sugar
  • 40 g water

Filling

  • 30 g ruby chocolate (can also be replaced for white chocolate)
  • 163 g white chocolate
  • 100 g raspberries, fresh or frozen, for puree
  • 75 g whipping cream
  • evt raspberry liquor
  • 125 g fresh raspberries

Instructions

  1. Line 2 baking sheets with parchment paper. The parchment paper must lie flat inside the baking sheet, so trim is necessary. Using a 2 inch round cookie cutter as a guide and trace 48 circels, an inch apart, onto the paper with a pencil. Flip over the parchment to precent pencil marks transferring to your macarons.
  2. Sift the icing sugar into a medium bowl. Also sift the almond meal and finely grinded pisatchio nuts. If parts don’t come through the sieve, blend them finer. Otherwise you don’t get smooth macarons. Sift everything again so you’re sure there are no big pieces in your mixture.
  3. Add 55g egg whites to your fry ingredients and mix with a spatula until you have a paste. If you use powdered food coloring, add it now. When you use liquid wait with adding.
  4. Put 55 g egg whites in the bowl of a stand mixer fitted with the whisk attachment. Set aside. Put granulated sugar and water in a small saucepan on low fire and heat until sugar is dissolved. Put heat high and bring to a boil. Heat until mixture reach a temperature of 118 ℃ (244 ℉). If you use liquid food coloring, add this now. Start whisking the egg whites in your stand mixer just before the temperature is reached.
  5. Whisk until egg whites are starting to get white and foamy. While whisking constantly on low speed (to avoid splashing hot syrup), slowly add the cooked sugar mixture to the beaten egg whites, pouring it down the inside edge of the bowl. You’ll get a bit of it hardening on the side of the bowl, but that’s okay – just leave it there. 
  6. Whisk at high speed until the mixture is cool, about 5 minutes. About 1 minute before the end, you can add food colouring, if not done at the almond paste stage. The mixture should increase in volume and become firm and shiny, and it should be thick and marshmallowy and you have a beak when you lift the whisk.
  7. Add one-third of the meringue mixture to your almond paste and fold together with a large rubber spatula. Fold in the remaining meringue until the batter is completely combined and soft but thick (it should flow back into itself, much like the consistency of running lava). `The meringue will deflate, but do not overmix or the finished shells may tilt or lose their lacy foot.
  8. Fit a large piping bag with a 1/2 inch plain round tip (# 5 is standard). Fill the piping bag half full so it will be easy to handle. Holding the piping bag upright just above the baking sheet and in the middle of your pencilled circle, squeeze out a mound of batter, stopping just before it reaches the edge of the circle. Repeat until the batter is finished. Work quickly when you refill the bag to avoid mixing the batter any further. Once all the shells are piped, gently tap the bottom of each baking sheet against the counter to knock out any air bubbles and to smooth out the tops.
  9. Allow the piped shells to sit, uncovered for 30 minutes (this will assist in creating the much-desired lacy foot). The shells should feel dry to the touch on top. The length of time they need to sit will vary depending on the time of year and the humidity. 
  10. Bake for 15 minutes, rotate the baking sheet front to back and top to bottom and bake for another 8 minutes. (opening the oven door makes also escape fluids). Rotate the sheets once more, check if the macarons are ready to see if the bottom is hard and dry and doesn’t stick to your baking paper. If not bake for another 8 minutes and check again. If they still aren’t dry bake for 2 more minutes and check again. Allow the shells to cool on the baking sheets. 

Filling

  1. Mash the raspberries in a blender and pour the puree through a fine sieve, so you have no seeds in your ganache. You need 45 g puree.
  2. Chop the chocolate finely and put in a large bowl.
  3. Pour cream and raspberry puree in a small saucepan on medium heat, until the mixture starts to boil. Pour the hot mixture over the chocolate and let stand for 30 seconds. Stir until all chocolate is melted.
  4. Let cool to room temperature until your ganache is thick enough to pipe.
  5. Cut fresh raspberries in half. Pipe a circle of ganache on a macaron half and put half of the raspberry in the middle. Place another macaron on top. Store in fridge until serve.

Pistache macarons met frambozen vulling

Ingrediënten

Macarons

  • 120 g amandelmeel
  • 30 g zeer fijn gemalen pistache noten
  • 150 g poedersuiker
  • 55 g eiwit
  • 150 g kristalsuiker
  • 40 g water
  • 55 g eiwit

Vulling

  • 30 g ruby chocolade (mag ook vervangen worden door witte chocolade)
  • 163 g witte chocolade
  • 45 g frambozen puree
  • 75 g slagroom
  • evt frambozenlikeur
  • 125 g verse frambozen

Bereiding 

  1.  Bedek 2 bakplaten met bakpapier. Meng het amandelmeel, de gemalen pistache noten en de poedersuiker in een kom. Druk het mengsel met een grote lepel via een fijne zeef in een andere kom. De stukjes die in de zeef blijven kun je proberen om met een blender nog fijner te maken, of je kunt ze wegen, vervangen door nieuw amandelmeel en opnieuw zeven. Hoe beter je zeeft, hoe gladder je macarons worden.
  2. Doe 55g eiwitten in een keukenmachine met een garde en laat nog even staan. Doe de kristalsuiker met het water in een kleine pan en roer op laag vuur tot de suiker is opgelost. Veeg de zijkanten van de pan schoon met een schoon kwastje, zodat er geen kristallen ontstaan. Breng op hoog vuur aan de kook en voeg op dit moment (indien gewenst) de kleurstof toe. Verhit het mengsel tot 118 ℃. Begin met het kloppen van de eiwitten in de keukenmachine vlak voordat je suiker deze temperatuur bereikt heeft.
  3. Wanneer de suikersiroop de juiste temperatuur heeft bereikt, zet je de keukenmachine op de hoogste snelheid en voeg je de suikersiroop geleidelijk via de zijkant toe aan het eiwitschuim. Klop ongeveer 8 minuten, of totdat de kom niet meer heet aanvoelt.
  4. Voeg de overige 55 g eiwitten toe aan de droge ingrediënten en spatel tot een egale pasta.
  5. Voeg nu 1/3 van het schuim toe aan de pasta en spatel tot dit mooi verdeeld is. Voeg nu de rest toe en ga door tot het mengsel langzaam van de spatel valt. Wanneer je te lang doorgaat, wordt je mengsel te slap en zal het uit gaan lopen bij het spuiten.
  6. Doe het schuim in een spuitzak met een rond spuitmondje. Houd de spuitzak ongeveer 1,5 cm boven een bakplaat en spuit er macarons op met een doorsnede van ongeveer 4 cm (steeds 3 cm uit elkaar). Maak de macarons af door de spuitmond snel van middenboven naar middenonder te bewegen. Als de macaron de juiste textuur heeft, wordt hij zacht en zakt het middelste beginpunt in, zodat je een gladde bovenkant krijgt.
  7. Laat de macarons 30 minuten op kamertemperatuur staan, tot er een vel op komt. Verwarm de oven voor op 125℃. Druk met een vinger op een van de macarons om te zien of er een vel op zit, de macaron mag niet plakkerig meer aanvoelen. Op vochtige dagen kan dit langer duren.
  8. Bak de macarons 10 minuten, open de deur even kort zodat het vocht kan ontsnappen en bak nog eens 5 minuten. Open de deur opnieuw, kijk of de macarons droog zijn aan de onderkant. Zo niet, bak dan nog eens 5 minuten en controleer opnieuw.

Vulling

  1. Pureer de frambozen en duw door een zeef, zodat je geen zaadjes in je ganache hebt. Je hebt 45 g puree nodig.
  2. Hak de chocolade zeer fijn en doe in een grote schaal.
  3. Verwarm de slagroom en frambozenpuree samen in een pannetje. Zodra de room kookt giet je het hete mengsel over de chocolade en laat dit 30 seconden staan. Roer daarna tot de chocolade gesmolten is.
  4. Laat afkoelen tot de ganache dik genoeg is om te spuiten.
  5. Snijd de verse frambozen door de helft. Spuit een cirkel ganache op de macaron en leg een halve framboos in het midden. Plaats een andere macaron helft er op. Bewaar in de koelkast.
