One of the things I’ve learned on the workshop is that you can make delicious things from plants I didn’t even know that they were eatable. You can make this syrup also with other things. It’s delicious to make a drink of this syrup or just into some yogurt. Curious what you think of the taste! Let me know what you think it tastes like..
Peony syrup
Ingredients
- 1 cup loosely packed peony leaves (pesticide-free)
- 2 cups water
- 2 cups sugar
- 1 tablespoon lemon juiceYou can also use more or less peonies, water and sugar, just use the same proportions
Method
- Remove the petals from the peonies. Be careful to avoid the pollen.
- Bring water to a boil in a small saucepan. When the water boils, remove from the heat and add the petals. Put lid on and let steep for at least 8 hours or overnight.
- Strain liquid from petals into a bowl. Pour back into the pan and add the sugar.
- Bring to boil and let simmer until the sugar is dissolved. Remove from heat and let cool completely.
- Add lemon juice and stir. The syrup will change from yellow to a blush. I added some raspberry juice for the photo, otherwise you wouldn’t see the syrup. But you don’t have to.
- You can store it refrigerated in a glass jar for up to a month. Very delicious into yogurt with some fresh fruit!
