I love the British Royal Family! It’s funny, because we have a Royal Family ourselves, but there is something about the British that intrigues me. I know (thanks to Philippa Gregory) everything about the history of the Britisch Royals. Ask me anything about the Tudors and I know it. I think it’s really fascinating.

 

Of course, I was very surprised that one of my girl crushes, the girl from Suits, was going to marry prince Harry! And I had to know every detail about the wedding. Of course, I was pleasantly surprised by their choice of wedding cake. Lemon and elderflower, what an amazing choice! This cake is my variation of the wedding cake. I hope you like it! 

 

Lemon poppyseed cake with elderflower meringue buttercream

 

 

Ingredients 

Cake

  • 250 g all purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 210 ml whole milk, room temperature
  • 1 teaspoon vanilla extract
  • 150 g unsalted butter
  • 250 g sugar (reserve 30 g)
  • 4 large egg whites, room temperature
  • 1 tbsp poppyseed
  • juice and zest from 1 lemon

 

 

Elderflower buttercream

  • 4 large egg whites
  • 180 g granulated sugar
  • 250 g unsalted butter, room temperature
  • 2-4 teaspoons elderflower cordial (to taste)

 

 

 Instructions

Lemon cake 

  1. Preheat the oven to 175 ℃ (350 ℉). Lightly grease a 15 cm and a 18 cm round cake pan with butter and line the bottoms with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder and salt. In a large measuring cup, combine the milk, lemon juice, zest and vanilla.
  3. In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and 220 g sugar on medium speed until light and fluffy, about 3 minutes.
  4. With the mixer on low speed, alernate adding the flour mixture in 3 additions and the milk mixture in 2 additions, beginning and ending with the flour mixture. Blend after each addition until just combined, stopping the mixer to scrape down the sides of the bowl at least once. Scrape the batter into the large bowl and set aside.
  5. Clean and dry the mixer bowl (or if you have another one, you can use that one). Using the whisk attachment, whisk the egg whites on medium-high speed until foamy. Add the reserved 30 g sugar in a slow, even stream. Continue to whisk on medium-high speeds until the meringue is glossy and holds stiff peaks.
  6. Gently fold a bit of the meringue into the batter to lighten it. Gently but thoroughly fold in the remaining meringue and poppyseed, being careful not to overmix the batter or it wil deflate. Divide the batter evenly between the pans and smooth the tops with an offset spatula or the back of a spoon.
  7. Bake for 25-35 minutes or until a toothpick inserted in the centre comes out clean. Allow the cakes to cool in the pans for 10 minutes before turning them out onto a wire rack to cool completely. Gently remove the parchment if it sticks to the bottom of the cakes.

 

Buttercream

 

  1. Pour egg whites and sugar in a clean and heatproof bowl. Put the bowl over a saucepan with simmering water. The water should not be touching the bowl.
  2. Whisk constantly until the mixture reaches about 65 ℃ (about 140-150 ℉). If you don’t have a sugar thermometer, just rub some mixture between your fingers. If the sugar has melted and the mixture is hot to touch, it’s ready.
  3. Remove the bowl from the heat and pour the mixture in a large bowl or in the bowl of a stand mixer. Mix with a electric mixer until cold and the eggwhites are white and fluffy.
  4. Start adding the butter, piece by piece. Don’t worry if the mixture looks curdled and soupy, just keep beating until smooth.
  5. Add the elderflower cordial to the buttercream and mix until smooth.

 

Assemble

 

  1.  If the cakes are rounded on top, even out with a knife.
  2. Put the first layer on a cake board or a cake stand. Spread a layer of frosting on the first layer. Repeat this with the second layer.
  3. Spread a thin layer of buttercream all over the cake (this is the crumb coating layer, to hold all the crumbs in place). Put the cake in the fridge for about 15 minutes or until the crumb coating had firmed up a bit.
  4. Spread the remaining frosting all over the cake until the cake is smooth.
  5. Decorate with (eatable) flowers.

 Citroen maanzaad cake met vlierbloesem botercrème

 

Ingrediënten

 

Cake

 

  • 250 g bloem
  • 1 eetlepel bakpoeder
  • 1/4 theelepel zout
  • 210 ml volle melk, kamertemperatuur
  • 1 theelepel vanille extract
  • 150 g ongezouten boter
  • 250 g suiker
  • 4 grote eiwitten, kamertemperatuur
  • 1 eetlepel maanzaad
  • sap en rasp van 1 citroen

 

Botercrème

  • 4 grote eiwitten
  • 180 g kristalsuiker
  • 250 g ongezouten boter, kamertemperatuur
  • 2-4 theelepels vlierbloesem siroop

 

Bereiding

 

Cake

  1. Verwarm de oven voor op 175 ℃. Vet 2 bakvormen van 15cm en 18cm in en bestuif met bloem. Bekleed de bodem met bakpapier.
  2. Doe de bloem, bakpoeder en zout in een kom. Mix de melk, citroensap en -rasp en vanille in een maatbeker.
  3. Doe de boter en 220 g van de suiker in de kom van een staande mixer met platte deeghaak (als je deze niet hebt kan het ook met een elektrische mixer). Klop de boter en suiker licht en luchtig in ongeveer 3 minuten.
  4. Zet de mixer op een lage stand en voeg om en om het bloem mengsel (in 3 keer) en het melk mengsel (in 2 keer) toe. Begin en eindig met de bloem. Schraap de zijkanten van de kom schoon met een spatel, zodat al het beslag goed meegenomen wordt. Doe het mengsel in een grote kom en zet opzij.
  5. Maak de mix kom goed schoon. Plaats nu de garde in de mixer en klop de eiwitten tot ze beginnen te schuimen. Voeg nu de overgebleven suiker (30 g) toe en klop tot een stevig en glimmend schuim.
  6. Vouw voorzichtig een beetje meringue door het beslag, zodat het iets lichter wordt. Vouw nu de rest van de meringue en het maannzaad door het beslag, maar ben voorzichtig. Probeer niet te ovemixen, maar alles moet wel goed gemengd zijn. Verdeel het beslag over de bakvormen en maak de bovenkant glad met een spatel of de achterkant van een lepel.
  7. Bak 25-35 minuten, of tot een sate prikker die in het midden van de cake wordt gestoken er schoon uitkomt. Laat de cakes 10 minuten in de vorm afkoelen voordat je ze op een rooster stort. Laat helemaal afkoelen.

 

Botercrème

  1. Doe de eiwitten en suiker in een hittebestendige kom. Zet deze op een pan kokend water en verhit het mengsel al kloppend met een garde tot 65ºC, of tot de suikerkristallen gesmolten zijn. Schenk het mengsel in een grote kom en blijf kloppen met een elektrische mixer tot het schuim licht en luchtig is. Klop tot het schuim afgekoeld is; dit duurt ongeveer 10 minuten.
  2. Voeg de boter beetje bij beetje toe. Klop zodra alle boter toegevoegd is nog 3-5 minuten, tot er een samenhangende massa is ontstaan.
  3. Voeg de siroop toe en mix kort tot gemengd.

Samenstellen

  1. Leg de eerste cakelaag op een plateau of schaal. Zorg dat de bovenkant vlak is en snijd deze anders wat bij. Verdeel een egale laag frambozen botercrème over de bodem. Doe dit ook met de volgende laag. Leg de laatste taartlaag erop met het snijvlak naar onderen.
  2. Strijk een dunne laag botercrème over de hele taart. Laat de taart 20 minuten in de koelkast staan zodat deze wat kan opstijven.
  3. Verdeel de rest van de frosting tot de taart helemaal gelijkmatig bekleed is. Zet terug in de koelkast.
  4. Decoreer eventueel met (eetbare) bloemen.
